Pasta Night, Take-out, Curbside Pick-up was a huge success!
We are happy to share that our Pasta Night Take-out Curbside Pick-up was a huge success! We had amazing volunteers and enthusiastic patrons ready to welcome us back. Our reopening committee spent months preparing and planning our COVID prevention plan. In this situation, the words of Benjamin Franklin rang true; “By failing to prepare, you are preparing to fail.” We were prepared, and it made all the difference in our success.
Transitioning from an in-house, sit down restaurant business model to a curbside take-out model was the biggest challenge. Serving freshly cooked pasta versus having dinner prepared and ready to go was the major hurdle we had to overcome. The phrase, ‘timing is everything’, was the mantra every Wednesday night. Our customers and patrons were extremely gracious as we worked out the kinks and redesigned our processes, with safety protocols at the forefront of every decision. Our kitchen staff of Iole Coppellotti, Jim Ficco, Anthony Isgro, Ben Polagruto and Arthur Taddeo were steadfast, flexible, and committed to our success.
We welcomed many new patrons and accepted orders via phone and online. Our grand finale was on November 18, 2020, when we sold out dinner before 5 pm, serving 110 dinners. We were on time, well organized and fully staffed. Over 6 weeks, we served approximately 450 dinners, exceeding our goal of serving 50 dinners per week.
After so many months apart, it was truly a joy to serve together. We were fully staffed with volunteers every week, including student volunteers from Natick High School. Most importantly, everyone remained COVID safe and we exceeded all our goals. We will reassess our reopening strategy in 2021. Until then, Thank you and Merry Christmas.
